For six servings, you will require six large eggs, with the whites and yolks separated. You also need five ounces of drained ricotta cheese (preferably fat-free), six sheets of lasagna noodles, ¼ cup of chopped basil, two tablespoons of grated Pecorino cheese, a pinch each of salt and pepper, ¼ cup olive oil, and three diced Roma tomatoes.

Cut the pasta into 12 disks using a biscuit cutter. Keep them moist under a wet towel. Meanwhile, mix together the ricotta cheese, a tablespoon of Pecorino, and two tablespoons of basil. Place the six pasta disks on a board. Fill one tablespoon with the ricotta mixture and place it in the middle of the disks, allowing for room around the edges to later seal the ravioli. Push into the middle of the mixtures as these will hold the egg yolk.

Place the Norco Ranch egg yolks gently into the “nest” you’ve made in the middle. Brush the egg white around the edges of the bottom pasta disk then cover with another pasta disk. Crimp the edges using a fork, ensuring that they are sealed. You must not break the egg yolk.

Put water in a shallow sauté pan, just enough to cover the ravioli. Bring it to a simmer before gently placing the ravioli in the pan with a slotted spoon. Cook for about a minute then remove carefully and set on a plate. Heat the remaining basil, the olive oil, and tomatoes in a small saucepan. Then drizzle the mixture over the ravioli. Finally, sprinkle with the remaining Pecorino cheese and serve immediately.

How to prepare the delectable Diver’s Below the Sea Salmon with Egg dish

If there’s one dish people need to learn before the summer ends, it’s the Diver’s Below the Sea Salmon with Egg, simply because it reminds people that the water and waves that provide refuge from the sweltering heat are never that far away.

Here are the ingredients as seen in
4 large Norco Ranch eggs
2 Tbsp. fresh ginger, peeled and grated
2 Tbsp. soy sauce (low sodium)
2 Tbsp. rice wine vinegar
2 Tbsp. sesame oil
4 salmon fillet, 6 oz. with skin
1 Asian salad kit

First, create a mixture by putting the ginger, soy sauce, vinegar, and sesame oil in a bowl (preferably a glass pie dish). Put the fillets in the bowl to marinate it; anywhere between 15 to 45 minutes in the refrigerator should do the trick.

Take the fillets out of the fridge and grill it for 4 minutes on each side. The center has to turn opaque in color. Keep it warm by setting it in a warm oven.

Put water in a large saucepan until it reaches 3 inches in depth, and heat the water until it boils. Once done, lower the heat to keep a simmer going.

Break the Norco Ranch eggs, one at a time, into a small bowl, and carefully let the eggs slip into the saucepan. Wait for 3 to 4 minutes for the eggs to cook before removing them with a slotted spoon. Gently dry them with paper napkins.

Divide the salad and salmon on 4 plates. Top the dishes with the eggs.

An omelet sandwich unlike any other

Omelets are wondrous concoctions that provide an unforgettable experience for the taste buds. Made with farm fresh Norco Ranch eggs, they become all the more enticing. The traditional omelet is always good but have you ever tried to make an omelet sandwich?

To make one sandwich, you have to gather the ingredients below, courtesy of

1/2 cup frozen tri-color pepper and onion mixture
2 tsp. butter, DIVIDED
2 tbsp. Water
1/8 tsp. Salt
Dash Pepper
1 slice provolone cheese, cut in half
1 whole wheat OR white hoagie-style bun, toasted

The first step in the preparation of the omelet is to sauté the pepper mixture in a teaspoon of butter. Do this in an omelet pan (a skillet will also do) with medium to high heat, until the mixture becomes tender. It should take around two minutes.

Take out the mixture from the pan and either clean the pan or use a new one.

Mix the eggs, water, and salt and pepper in a bowl and blend well.

Put the remaining teaspoon of butter in the pan and wait until hot. Try tilting the pan to coat it with butter, before pouring the mixture into the bowl. You’ll notice how the mixture sets almost instantly at the edges.

Slowly and gently push the set portions at the edges to the center. This will allow the uncooked parts to set as well. Continue doing this. Tilt the pan if needed.

When the whole egg mixture is cooked, put the pepper mixture from earlier at the center, and cheese on top. Fold the omelet into the middle before sliding it into the bread.

Voila. That’s a simple yet amazing way to make an omelet from Norco Ranch eggs.

Bacon blue cheese mashed potato waffles with eggs. Serve topped with crispy bacon and a poached egg.

Thanksgiving breakfast egg rolls. Dice the leftover turkey and place into a bowl, adding carrots and leeks.  Separate and flatten spring roll wrappers, and put a base of last night’s mashed potatoes.  Take a tablespoon of the leftover turkey over the potatoes and roll into bite-sized pieces, sealing the wrappers with a beaten egg wash.  Pan fry the rolls for 3 minutes, remove and drain in a lined strainer with paper towel.  Slice the rolls diagonally and serve with heated leftover gravy or cranberry sauce.
