Safety First: Quality Assurance Programs For Eggs

United Egg Producers: The UEP established back in 1994 a "5-star" total quality assurance food safety program with the objective of reducing the occurrences of Salmonella Enteritidis in hen farms.  It was redesigned in 2009 to encompass other safety issues, allowing veterinarians and poultry scientists to monitor and ensure the safety of the eggs proactively.

California Egg Quality Assurance Program: This state-initiated program has its core components based on the Hazard Analysis Critical Control Points (HACCP) and helps protect the eggs from salmonella and chemical residues.
