Bacon blue cheese mashed potato waffles with eggs. Mix together 2 cups of mashed potatoes, 1 large egg, crumbled bacon, and blue cheese to form a sticky dough.  Add salt, pepper, and butter to taste, and then scoop a serving into a hot waffle iron.  Cook until the edges are crispy and repeat with the rest of the batter. Serve topped with crispy bacon and a poached egg.

Thanksgiving breakfast egg rolls. Dice the leftover turkey and place into a bowl, adding carrots and leeks.  Separate and flatten spring roll wrappers, and put a base of last night’s mashed potatoes.  Take a tablespoon of the leftover turkey over the potatoes and roll into bite-sized pieces, sealing the wrappers with a beaten egg wash.  Pan fry the rolls for 3 minutes, remove and drain in a lined strainer with paper towel.  Slice the rolls diagonally and serve with heated leftover gravy or cranberry sauce.

Italian deviled eggs

Ingredients include eggs (6, hard boiled), mayonnaise (1/3 cup), onions (caramelized, 2 tbsp.), Parmesan cheese (freshly shredded, 1/3 cup), prosciutto (cooked and crumbled, 2 tbsp.), and dried basil (1/2 tbsp.) Mexican deviled eggs

The only recipe included on this post without mayonnaise, the ingredients for Mexican deviled eggs are eggs (6, hard boiled), chunky salsa (1/2 cup), sharp Cheddar cheese (shredded, 1/3 cup), sour cream (1 tbsp.), ground cumin (1/2 tbsp.), and chili powder (1/2 tbsp.) Slice the eggs in half, lengthwise, and separate the yolks. Mix the yolks together with the salsa, cheese, sour cream, cumin, and chili powder, until well blended. Spoon filling into egg whites, and if desired, sprinkle more chili powder and garnish with cilantro.

Traditionally, an eggs Benedict is made up of a halved English muffin, topped with Canadian bacon, ham, or bacon, along with a poached egg and hollandaise sauce. It’s named after a retired Wall Street broker named Lemuel Benedict, who, in a 1943 New Yorker interview, was said to walk into the Waldorf Hotel looking for a hangover cure. His order: buttered toast, poached eggs, crispy bacon, as well as some hollandaise. 

Every element of the dish is critical. The muffins should be fresh, hot, and fluffy, while the smoked ham is best wafer-thin.
