Kitchen Genius:Some Of The Best Vegetable-Egg Matchings

Culinary genius has always been about finding how well two or more ingredients combine to produce a delectable dish. Such a phenomenon is demonstrated by vegetable-egg combinations that have survived in many generations of family recipes. Here are a few examples.

1. Onions
Onions are wonderful egg companion. Onions caramelize when the right amount of heat is applied. This means that an onion’s juices turn into sugar with the help of heat, making it known for its sweetness. With eggs, this becomes a very interesting mix with its sweetness and slight crunch.

2. Tomatoes
Tomatoes are very popular for having just the right amount of sourness that typifies their unique flavor. Also, tomatoes are quite effective in bringing an appetizing amount of color to any food. Thus, they make eggs more sumptuous. Also, scrambled eggs with fresh tomatoes as topping can prove to be the perfect quick breakfast.

3. Eggplants
Eggplants combined with eggs may sound weird if only for the name. However, these two ingredients play beautiful music together in the kitchen. Eggplants also react to heat the way onions do. However, the difference with eggplants is that they come with a really even consistency, which makes eggs mix evenly too.

There are many egg-vegetable combinations out there, and certainly, experimentation in the kitchen is always encouraged. These dishes make for a lot of delicious gastronomic experiences, as well as healthy eating.

Eggs And Baking: Yolks Versus Whites

Eggs are a key component in baking and the contributions they give make them very difficult to replace adequately. However, the two main parts of the egg play divergent roles in the baking process.

Egg yolks contain most of the egg’s fat and nutrients; the fat in egg yolks emulsifies the mixture, creating a moist tenderness in the resulting product. Many cakes rely on egg yolks to give them that fluffy consistency.

Baked goods that rely on yolks solely rather than whole eggs are distinctly more tender and luscious due to the higher fat content. Besides browning better, egg yolk-dominated baked goods often have a distinctive yellow appearance. Their subtle flavor, however, tends to mute those of others placed in the mixture, which could be good or bad depending on personal preference and the desired flavor intensity.

Egg whites, on the other hand, mostly contain water and the proteins albumen and ovalbumin. Egg whites are often separated from yolks to remove a fatty component that arrests its ability to foam. This would then allow it to be beaten vigorously into an airy, voluminous consistency.

Egg whites are a vital ingredient in meringues and cakes with spongy consistencies like angel’s food cakes, all of which are made possibly by the tandem role played by the two proteins, which allow bakers to create a fluffy foam that can solidify when heated. Egg washes are mostly made of egg white and create a distinctive sheen on finished baked goods.

Egg whites also do not dilute other flavors. On their own, however, egg whites can make the mixture drier because of their lack of fat.

Eggcellent Ideas: What To Do With Leftover Egg Whites

Leftover egg whites might seem too plain to tickle the imagination when this is taken for its obvious simplicity. However, there are so many ways that egg whites can be used. Here are some ideas.

If you have some raw egg whites, you can make cooked rice more interesting. Sautee some onions, garlic, and green peas. Once the ingredients have caramelized, add the rice. As you pour in the egg whites, stir-fry it until all the egg whites are cooked. With a little salt and seasoning, you’ll have a most unforgettable fried rice experience.

Egg whites also make for a delightful cream sauce. If you have some sour cream, mayonnaise, and cream cheese, cooked egg whites can add a mild crunch to this. You can use such a mixture as a sandwich spread. It can also serve as a topping for steamed fish.

Egg whites can make for the best soups, too. Adding egg whites to soup can make it more flavorful. Simply bring the soup to a slow simmer then pour into the egg whites. Stirring continuously will cook the egg whites, and you’ll end up having delicious thin strands.

Why Bodybuilders Love Their Egg White

The world’s best bodybuilders would often include eggs in their diet, sometimes cooking up to five to six in a single post-workout meal. And many of the world’s fittest people have sworn that eggs have helped keep them that way. Eggs are just plain super. They’re packed with protein and nutrients that aid in creating the ideal physique.

Egg whites for example, are sometimes called the perfect protein. Why? It has a lot to do with their amino-acid content, and how the body uses it. A whole egg has around 72 calories, with 6 grams of protein, 5 grams of fat, and 200 milligrams of cholesterol. The egg white by itself only takes in 17 of those calories, but contain 4 grams of protein. It also has no fat or cholesterol.

Egg whites can have up to 40 different proteins, with ovalbumin taking up more than half (55%). Ovotransferrin is another amazing protein that binds iron and helps the body combat microbes. Ovotransferrin makes up around 10% of the protein content. Ovomucin make up around 4% of the protein of egg white. The jelly-like property of egg white is due to the presence of ovomucin.

It’s also been found that egg white protein is rich in branch-chain amino acids (BCAAs) and arginine, which are both very helpful to bodybuilders. It also contains cysteine and methionine, which carry sulfur. All these amino acids aid in keeping the joints of the body healthy, as well and balancing the levels of several bodily hormones.

Safety First: Quality Assurance Programs For Eggs

Various safety programs serve as guidelines for egg farmers to ensure that consumers purchase eggs of the highest quality.  Norco Ranch, a family-owned egg producer from Southern California, adheres to these programs by implementing quality assurance and food safety procedures that are certified by a variety of organizations.  Some of these programs are the following:

Global Food Safety Initiative: GFSI is a private organization that is established and managed by the Consumer Goods Forum, an international association of retailers.  Its drive for continuous improvement of food safety management systems has helped meat and poultry processors around the world.

Safe Quality Food Program: This program is recognized by the GFSI and integrates quality assurance and food safety programs.  It is a leading global program that most retailers require from suppliers as it is their assurance that the products have met or exceeded all food safety regulations.

United Egg Producers: The UEP established back in 1994 a "5-star" total quality assurance food safety program with the objective of reducing the occurrences of Salmonella Enteritidis in hen farms.  It was redesigned in 2009 to encompass other safety issues, allowing veterinarians and poultry scientists to monitor and ensure the safety of the eggs proactively.

California Egg Quality Assurance Program: This state-initiated program has its core components based on the Hazard Analysis Critical Control Points (HACCP) and helps protect the eggs from salmonella and chemical residues.

Norco Ranch’s egg farms have guidelines, systems, procedures, and cross-functional teams that make sure their egg products are delivered safely and quickly to consumers in Southern California.  The farms’ comprehensive multi-faceted quality assurance and food safety programs are continually monitored and certified by different organizations.
