An omelet sandwich unlike any other

Omelets are wondrous concoctions that provide an unforgettable experience for the taste buds. Made with farm fresh Norco Ranch eggs, they become all the more enticing. The traditional omelet is always good but have you ever tried to make an omelet sandwich?

1/2 cup frozen tri-color pepper and onion mixture
2 tsp. butter, DIVIDED
2 EGGS
2 tbsp. Water
1/8 tsp. Salt
Dash Pepper
1 slice provolone cheese, cut in half
1 whole wheat OR white hoagie-style bun, toasted


The first step in the preparation of the omelet is to sauté the pepper mixture in a teaspoon of butter. Do this in an omelet pan (a skillet will also do) with medium to high heat, until the mixture becomes tender. It should take around two minutes.

Take out the mixture from the pan and either clean the pan or use a new one.

Mix the eggs, water, and salt and pepper in a bowl and blend well.


Put the remaining teaspoon of butter in the pan and wait until hot. Try tilting the pan to coat it with butter, before pouring the mixture into the bowl. You’ll notice how the mixture sets almost instantly at the edges.

Slowly and gently push the set portions at the edges to the center. This will allow the uncooked parts to set as well. Continue doing this. Tilt the pan if needed.

When the whole egg mixture is cooked, put the pepper mixture from earlier at the center, and cheese on top. Fold the omelet into the middle before sliding it into the bread.

Voila. That’s a simple yet amazing way to make an omelet from Norco Ranch eggs.
