Breakfast egg recipes the day after Thanksgiving

There’s always a lot of leftover food after Thanksgiving.  Instead of re-heating and losing all the richness of the flavor, make tasty breakfast dishes.  Incorporate fresh eggs and you’ll end up with exciting breakfast meals packed with so much protein and nutrients.  Here are some examples to have the best Thanksgiving dinner-inspired breakfasts.

Bacon blue cheese mashed potato waffles with eggs. Mix together 2 cups of mashed potatoes, 1 large egg, crumbled bacon, and blue cheese to form a sticky dough.  Add salt, pepper, and butter to taste, and then scoop a serving into a hot waffle iron.  Cook until the edges are crispy and repeat with the rest of the batter. Serve topped with crispy bacon and a poached egg.

Thanksgiving breakfast egg rolls. Dice the leftover turkey and place into a bowl, adding carrots and leeks.  Separate and flatten spring roll wrappers, and put a base of last night’s mashed potatoes.  Take a tablespoon of the leftover turkey over the potatoes and roll into bite-sized pieces, sealing the wrappers with a beaten egg wash.  Pan fry the rolls for 3 minutes, remove and drain in a lined strainer with paper towel.  Slice the rolls diagonally and serve with heated leftover gravy or cranberry sauce.
