Nutritious Egg Lunch Ideas For School

Making school lunches can be an intimidating, even overwhelming task for many parents, especially if they’re extremely busy or their child is a picky eater.  But nutrition or taste don’t have to be sacrificed when making a quick, easy school lunch; here are some egg lunch ideas to provide those kids their energy and nourishment the whole day.

 Egg pizza pockets

Get some frozen pie dough, eggs, salt and pepper, butter, pizza sauce, pepperoni slices, mozzarella cheese, and ranch dressing to make this crispy, exciting lunch or snack dish for schoolkids.  The pizza pockets can be prepared the night ahead and fried to a golden brown in the morning for only about three minutes.

 Egg burrito

Here’s a wrap that’s fresh, wholesome, and easy to assemble.  Get those scrambled eggs cooked with an assortment of veggies, from broccoli to tomatoes to spinach.  Heat the tortilla prior to use.  Stuff it with the scrambled eggs mixture, and wait until the tortilla turns golden brown before removing from pan.  Pack it with some salsa sauce.

 Avocado toast

Get a slice of whole wheat bread and add some avocado slices.  As another layer, add slices of hardboiled eggs, and then top it with some dried pepper flakes.  In your grade schooler’s lunch box, add some fresh slices of apples, cucumber, and cherry tomatoes for a healthy lunch treat.

Around The World Goodness With These Deviled Egg Recipes

Foodies and travelers say that it’s best to experience a local culture by tasting their popular dishes. For those who are unable to travel and experience other cultures, these deviled egg recipes might just quench the thirst for a foreign food adventure.

Italian deviled eggs

Ingredients include eggs (6, hard boiled), mayonnaise (1/3 cup), onions (caramelized, 2 tbsp.), Parmesan cheese (freshly shredded, 1/3 cup), prosciutto (cooked and crumbled, 2 tbsp.), and dried basil (1/2 tbsp.) Slice the eggs in half, lengthwise. Remove the yolks and place them in a small mixing bowl. Using a fork, mash the yolks; stir in mayonnaise, onion, Parmesan cheese, prosciutto, and dried basil. Spoon filling into the egg whites. If desired, garnish each with fresh basil.

Greek deviled eggs

Eggs (6, hard boiled), mayonnaise (1/3 cup), feta cheese (crumbled, 1/4 cup), Kalamata olives (pitted and chopped, 1/4 cup,), red onion (finely chopped, 1 tbsp.), Greek seasoning (1/4 tbsp.), and if desired, fresh dill or tarragon springs. Begin preparation by slicing eggs; remove yolks then place in a mixing bowl. Mash the yolks using a fork. Next, stir in mayonnaise, feta cheese, onions, olives, and seasoning. Spoon filling into the egg whites; decorate each with dill or tarragon.

Mexican deviled eggs

The only recipe included on this post without mayonnaise, the ingredients for Mexican deviled eggs are eggs (6, hard boiled), chunky salsa (1/2 cup), sharp Cheddar cheese (shredded, 1/3 cup), sour cream (1 tbsp.), ground cumin (1/2 tbsp.), and chili powder (1/2 tbsp.) Slice the eggs in half, lengthwise, and separate the yolks. Mix the yolks together with the salsa, cheese, sour cream, cumin, and chili powder, until well blended. Spoon filling into egg whites, and if desired, sprinkle more chili powder and garnish with cilantro.
